The story:
European wine as we know it was largely built by monks. The Cistercians of Burgundy spent centuries mapping which slopes produced which wine, tasting soils, and keeping records so meticulous that the vineyard boundaries they drew in the twelfth century still define the region today. Monasteries also brewed beer, distilled liqueurs, and ran the closest thing the era had to pharmacies. The daily wine allowance in some houses was generous enough to alarm visiting bishops. The work was devotional, the record-keeping was scientific, and the product was very good.
